Welcome to the Fire Pit, Diablo Energy's Recipe Book. Each month, we’ll update it with creative recipes from Chef Jeff, Owner and Head Chef of The Angry Tomato.

The Angry Tomato
This is a great sauce that can be used with any combination of fish, meat, or veggies. In the restaurant we serve it with shrimp, scallops, red peppers, carrots, and sugar snap peas.
- 2 tablespoons olive oil
- 4 cloves of garlic (minced)
- 1 large shallot (minced)
- 1 stick of lemon grass (minced - soft red part)
- 1 14oz can coconut milk
- 1 teaspoon red curry paste
- 1 tablespoon fish sauce
- Juice of one lime
- 1 can Diablo Energy Drink
- 1/4 cup of fresh chopped basil and cilantro, mixed
In a medium sauce pan heat olive oil on medium high. Saute garlic, shallots, and lemon grass until soft (about 5 minutes). Add Diablo, coconut milk, lime juice, curry paste, and fish sauce and bring to a low boil. Add fresh herbs and serve over basmati rice or Pad Thai noodles.
